Best Smoking & Curing Guides

I'm looking to start Curing and Smoking my own locally sourced Game and Meats, and was wondering if anybody could reccommened a good book for a beginner to learn the craft? Ideally it would include more than just a quick how to, as i would like to learn the finer points of the art and would like a good refernce guide to aid my learning. |

I’ve looked into a lot of books on this topic, and found a few that I really liked. The best two that I’ve found so far are by the Marianski’s: Meat Smoking and Smokehouse Design Home Production of Quality Meats and Sausages Those two will get you started with a ton of valuable information that can be applied to game meat as well. I don’t remember specifics on wild game (I was looking for pork at the time) but the TOC on Amazon shows they have sections for that. I’d probably start with the smokehouse design one, since most folks don’t have that. It has fewer recipes, but has almost enough knowledge to run a commercial smokehouse. |
